Tonight we made adobe spice rubbed pork tenderloin, served over arugula, with a pico de gallo of black beans, jalapeno and tomatoes on top.  Hubby gave it an A+.  It’s from this book Eat Clean Diet.  Then for dinner, we had delightful organic strawberries with a little nonfat greek yogurt.  Doesn’t healthy food suck?  No, it does not.  Cooking at home is awesome, especially when you know you have leftovers for the next night when you get home at 10 p.m.
